Chile Rellenos Casserole

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

1 lb ground beef
1/2 cup chopped onion
1/2 tsp salt
1/2 tsp pepper
About 1/2 lb jalapenos, chopped, divided
2 1/2 cups shredded sharp Cheddar cheese, divided
1 1/2 cups milk
2 Tbsp flour
2/3 tsp salt
Pepper to taste
Bailey Farms hot sauce to taste
3 eggs, beaten


Cook beef, onion, salt and pepper in a skillet until the meat begins to brown. Drain, Spread about half the jalapeno peppers over the bottom of a 9×13-inch baking dish. Sprinkle with 1/2 the cheese and top with all of the meat mixture. Add the remaining cheese and second can of chiles. Combine milk, flour, salt, pepper, Bailey Farms hot sauce, and eggs. Pour over casserole and bake at 350° for 50 minutes or until knife inserted comes out clean. Cool 5 minutes. Cut into squares. May be frozen. Reheat while still frozen at 400° until heated through.
