Chile-Infused Margaritas

At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.

When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.

Ingredients:

Chile-infused simple syrup:
2 cups water
1 cup sugar
4 red chiles, sliced in half from the stem down for the margaritas
150ml (5.07 fluid ounces) blanco tequila (silver)
150ml (5.07 fluid ounces) triple sec
150ml (5.07 fluid ounces) freshly squeezed lime juice
100ml (3.38 fluid ounces) chile-infused simple syrup
3 cups roughly crushed ice
3 limes, thinly sliced

Instructions:

Serves: Makes 1 litre (0.26 gallons)

To make the syrup, bring the ingredients to a boil and allow to bubble for 5 minutes until thickened slightly. Remove from the heat and set aside to cool. To make the Margaritas, combine all the ingredients in a large jug and allow to stand for 10 minutes before serving in tumblers with ice.
