Chile Aioli
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Ingredients:
5 cloves garlic
1/2 – 1 tsp. Thai chile, stemmed, seeded and minced
1 egg yolk
salt to taste
ground white pepper (can use black pepper)
1 cup plus 1 Tbsp. extra virgin olive oil
Instructions:
With a pestle and mortar, muddle the garlic, egg yolk and chile into a smooth paste. Season and slowly pour the olive oil into the mortar while whipping vigorously. Stop when it resembles the ready-made mayonnaise you find in grocery stores. (Using a blender or food processor makes it easier.)
Try this Aioli with chile. It is also great with steamed veggies, hard boiled eggs, cold meats, poached fish, snails, etc.
