Cheeseburger Stuffed Cubanelle Peppers

Also known as Italian Frying peppers. Cubanelle peppers are large and blocky. They are light green in appearance and they mature red. The thin walls of this pepper make it an excellent choice for frying. This pepper is not hot.

7-8 Med-Large Cubanelle Peppers
1lb ground chuck
1 yellow onion chopped
8oz crumbled cheddar cheese
½ cup ketchup
¼ cup mustard
1 tsp pickle juice
1 tbsp mayonnaise
Hamburger dill pickle slices and juice.
Crumbled bacon (optional)

Cook ground chuck and onions until done and let cool. Mix ketchup, mustard, pickle juice and mayonnaise in a small bowl and set aside. Mix the crumbled cheese and optional bacon with the meat. Cut the peppers lengthwise in half and scoop out seed cavity. Take a spoon and line the insides of the pepper halves with the burger sauce. Place 2-3 pickle slices inside of each pepper. Stuff the burger mixture in top of the pickles. Cook at 350 degrees for 30 minutes.
