Cheese Squares

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

4 eggs
1 lb shredded Cheddar cheese
1 tsp minced onion
2 jalapeno peppers, seeded and chopped

Instructions:

Preheat oven to 350°F (175°C). Place the eggs into a food processor, and process until light and frothy. Add Cheddar cheese, onion, and jalapeno peppers, and process until smooth. Pour into an ungreased 8×8 inch baking pan. Bake in the preheated oven until set, 25 to 30 minutes. Cool for 5 minutes. Cut into squares to serve.

Serves 16.
