Charros (Cowboy-Style Pinto Beans)
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
4 cups cooked pinto beans or use 2 cans (15 oz. each), drained
1 large onion, chopped
4 cloves garlic
1 medium red bell pepper, chopped
2 large tomatos, chopped
1-2 chopped jalapeno chiles
4 slices bacon, chopped
1 cup beer
1 cup chicken stock
1/2 cup chopped cilantro
salt and pepper, to taste
Instructions:
Cook the bacon, onion, garlic and pepper over medium heat until the vegetables are tender, about 5-8 minutes, draining off any excess fat. Increase the heat to high and stir in tomatoes, then cook them for about 3 minutes. Stir in the drained beans, beer, stock, jalapeno chiles, 1/4 cup of cilantro and the salt and pepper. Simmer the ingredients for about 20 minutes (adding more liquid if necessary). Stir in remaining cilantro and adjust seasonings right before serving.
