Charred Corn and Black Bean Salsa
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
4 ears corn, roasted or grilled
1 can black beans, drained and rinsed
1/4 cup jalapeno pepper, seeds and ribs removed
1 medium tomato, chopped with seeds removed
1/4 cup cilantro, chopped
2 cloves garlic, minced
2 Tbsp. extra virgin olive oil
juice of one lime
salt and pepper, to taste
Instructions:
Carefully cut the corn from the cob and combine the scraped kernels with the remaining ingredients and refrigerate until ready to serve.
