Charcoal Dove

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

12 doves (mourning or white-winged)
8 oz Italian salad dressing
1 tsp Worchestershire sauce
Seasoned salt
Lemon pepper seasoning
Jalapeno peppers
12 strips bacon

Instructions:

Fillet dove from breastbone and marinate in salad dressing and Worcestershire sauce for 30 minutes to an hour. Sprinkle with seasoned salt and lemon pepper. Wrap whole breast (2 fillets) around a think strip of jalapeno, then wrap a slice of bacon around the dove. Place on a skewer and cook over open coals for 15 minutes or until bacon is cooked.
