Cauliflower Tacos with Orange-Strawberry Salsa and Baja Sauce
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
For the cauliflower filling:
Cauliflower (chopped) – about 4 cups
Onion (chopped) – 1 small
Jalapeno pepper – 1-2 no. (deseed them if you don’t want them spicy)
Red Chilli powder/Paprika – 1 tsp (optional)
Coriander powder – 2 tsp
Cumin seeds – 1 tsp or Cumin powder – 1/2 tsp
Turmeric powder – 1/4 tsp
Ginger (minced) – 1 tsp
Garlic (minced) – 2 tsp
Salt – to taste
Oil- 2 tsp
Cilantro/Coriander leaves (chopped) – 1-2 Tbsp
For the Orange-Strawberry Salsa:
Orange – 1 (segments, with juice)
Strawberries (chopped) – 4 no.
Red onion (finely chopped) – 4 Tbsp
Cucumber (seeded and finely chopped) – 4 Tbsp
Cilantro/Coriander leaves (chopped) – 1 Tbsp
Salt & Pepper – to taste
Lemon/Lime juice – 2 tsp
For the Baja sauce:
Mayonnaise – 1/4 cup
Sour Cream/Thick Yogurt – 1/4 cup
Hot sauce – 1 Tbsp
Jalapeno pepper (fresh or pickled, minced) – 1 Tbsp
Cilantro/Coriander leaves (chopped) – 1 Tbsp
Dijon Mustard – 1/2 tsp
Salt & Pepper – to taste
Apple Cider Vinegar – 1 tsp OR Lemon/Lime juice – 1 tsp
Honey – 1 tsp
For the tacos:
Corn tortillas – 8-10 (substitute with any tortilla of your choice)
Shredded Cheese – as required (optional)
Instructions:
For the cauliflower filling:
Heat oil in a pan on medium-high heat. Add in the cumin seeds and turmeric powder, and saute for 30 seconds. Then add in the onions with a pinch of salt and saute until lightly browned.
Then add the coriander powder and let it toast for 30 seconds.
Then add the chopped cauliflower, chilli powder (if using) and salt & pepper to taste. MIx well, so not add any water. Cook covered for about 8-10 minutes, until the cauliflower is soft, but not mushy.
Tip: Used ground chipotle/ancho chilli pepper for a nice smoky taste.
Finish with lots of chopped cilantro.
For the salsa:
Mix all the ingredients mentioned for the salsa into a bowl and season to taste. Let the salsa sit for at least 15 minutes.
For the sauce:
Mix all the ingredients mentioned for the sauce in a bowl and season to taste. The sauce should be thick, not runny.
To assemble the tacos:
Heat up the tortillas in an oven (wrapped tightly in a foil) or the microwave or the stove top or on the grill!!!
Serve immediately, fill in the cauliflower filling, some salsa and drizzle some baja sauce over it and squeeze some fresh lemon juice.
