Cascabel Tomatillo Salsa

These chiles will add a deep, nutty flavor to dishes and are great to use in salsas and sauces. It is a medium-hot chile that is good in soups, stews, sauces and sausage.

1 pound tomatillos, husked and rinsed
1/4 cup cilantro
3/4 cup onion, diced
2 garlic cloves, diced
2 cascabel chiles, rehydrated and diced


Bring the tomatillos to a boil for 5 minutes. Drain the tomatillos, reserving one cup of the liquid. Place the tomatillos, liquid and remaining ingredients in blender and blend for 30 seconds. Season with salt to taste.
