Cascabel Chile Sauce
These chiles will add a deep, nutty flavor to dishes and are great to use in salsas and sauces. It is a medium-hot chile that is good in soups, stews, sauces and sausage.
Ingredients:
2 cups water
8 cascabel chiles
1/4 cup red wine vinegar
1 tsp dry mustard
1 garlic clove
1/4 cup olive oil
Instructions:
Heat water to a boil. Add chiles. Boil, uncovered for 5 minutes.
Remove from heat, drain, and remove stems. Combine chiles, vinegar, mustard, and garlic in a food processor. With motor running, slowly pour in oil, and process until smooth. Serve at room temperature.
