Carolina Kimchi
Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.
Ingredients:
2 or 3 medium-sized cucumbers (peeled and sliced thin)
1-1/2 Tbsp. peanut oil
1/3 cup sesame seeds
3 Tbsp. Bailey Farms Red Habanero hot sauce or to taste
1/2 cup rice wine vinegar
2 cloves garlic, minced
1-1/2 Tbsp. sesame oil
1/3 cup chopped scallions
2 Tbsp. chopped fresh cilantro leaves
Instructions:
Put the peanut oil into a cast iron skillet over medium heat. Let the skillet heat for a couple of minutes, then add the sesame seeds. Cook until they just begin to pop, then transfer the seeds to a large glass bowl and turn off the heat.
Add the sliced cucumbers, garlic, hot sauce and rice wine vinegar to the sesame seeds and mix thoroughly. Drizzle with the sesame oil, gently toss and refrigerate for an hour or two. Excellent with grilled beef, lamb or chicken and sticky rice.
Garnish with chopped scallions and cilantro, if desired.
