Carne Asada a la Mexicana

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

4 Tbsp lime juice, divided
4 Tbsp vegetable oil, divided
2 Knorr Cilantro minicubes, crumbled
2 Knorr Garlic minicubes, crumbled
1 Knorr beef flavor bouillon cube, crumbled
1 1/2 lb flank steak
4 large tomatoes, halved
1 medium onion, cut into 1/2-inch thick slices
2 jalapeno peppers

Instructions:

Microwave 2 tablespoons, 2 tablespoons oil, 1 KnorrĀ® Cilantro MiniCube, 1 Garlic MiniCube and Beef flavor Bouillon Cube in small microwave safe bowl 20 seconds stir. Pour bouillon mixture over steak in large resealable plastic bag. Close bag and marinate in refrigerate 30 minutes.

Remove steak from marinade, discarding marinade. Brush vegetables with remaining 2 tablespoons oil. Grill steak and vegetables, turning occasionally, 12 minutes or until vegetables are tender and steak is desired doneness.

Remove skin from tomatoes. Remove skins and seeds from peppers chop vegetables. Combine vegetables, remaining 2 tablespoons lime juice and MiniCubes set aside.

Slice steak and serve with vegetable salsa and, if desired, with crumbled queso fresco.

Serves 6.
