Caribbean Guacamole

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors (yellow, orange, green, red, chocolate). Not only are they extremely hot, but they also have a unique, distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

4 Haas avocados, peeled and pitted
1/2 Tbsp. lime juice
1/2 cup finely diced fresh mango
1/2 cup finely diced fresh pineapple, well drained
2 Tbsp. dried shredded coconut (preferably unsweetened)
1/2 tsp. fresh habanero chile, stemmed, seeded and minced

Instructions:

Coarsely mash the avocado, then stir in the lime juice and fold in the remaining ingredients.

Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole.
