Candied Jalapenos

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

4 pounds fresh jalapeno chiles, sliced
2 pounds of onions, diced
1/2 cup vinegar
1/2 cup water
6-8 cups sugar (depending on taste)
2 Tbsp. mustard seeds
1 tsp. turmeric
2 tsp. celery seed (optional)
1 tbs. garlic powder
1 tsp. ginger

Instructions:

Slice the jalapenos into thin slices and dice the onions. Place them in a pan with water and vinegar, and bring to a boil. Reduce the heat and simmer for about 10 minutes or until tender. Pour off most of the water-vinegar mixture and add the sugar and spices. Bring to a soft candy temperature to completely dissolve the sugar, about another 10 minutes.

Add the boiling mixture into individual jars, leaving about 1/4″ of headspace, and tighten the lids.
