Caliente Christmas Salsa
The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. 6 tomatillos, diced
5 ripe tomatoes, diced
1/2 cup minced onion
2 jalapeno peppers, chopped
1 fresh cactus leaf, trimmed and cut into 1/4-inch dice
4 garlic cloves, minced
1 bunch fresh cilantro, chopped
6 Tbsp fresh lime juice
Salt and ground black pepper to taste
Combine the tomatillos, tomatoes, onion, jalapeno peppers, cactus, garlic, cilantro, lime juice, salt, and pepper in a bowl. Stir gently to combine.
