Breakfast Tacos with Avocado Salsa
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
Salsa:
1 avocado, diced
1/2 small onion, diced
1 jalapeno pepper, minced (wear gloves when working with hot peppers!)
small handful cilantro, chopped
juice of 1 lime
1/2 tsp sugar
salt to taste
Tacos:
8 corn tortillas
8 large eggs
1 cup feta, crumbled
hot sauce
oil for cooking eggs
Instructions:
For the salsa: combine all ingredients and adjust seasonings.
For the tacos: cook eggs in a skillet, to your liking. In another skillet, warm the tortillas. Place warm tortilla on plate, top with an egg, some of the salsa and feta. Add hot sauce and dig in!
Serves 4.
