Black-Eyed Pea Salad

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1/3 cup fresh lemon juice
1/3 cup olive oil
1/2 tsp. paprika
1 tsp. ground cumin
1 tsp. white pepper
1 tsp. salt
4 scallions, minced
1/2 red onion, diced
2 jalapeno peppers, stemmed seeded and chopped
1/4 cup chopped Italian parsley
1/4 cup fresh cilantro, chopped
1 green bell pepper, seeded and chopped
2 large tomatoes, seeded and chopped
1 (16 oz.) can black-eyed peas, strained
1 bunch spinach leaves, stemmed and well washed

Instructions:

Place the first 7 ingredients in a bowl and whisk vigorously to mix well. Set aside. Mix the other ingredients except spinach and chill 30 minutes.

Place spinach leaves on serving plates and top with other ingredients. Whisk dressing and spoon over salad.

Serves 4.
