Black-Eyed Pea Dip

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 lb Old English sharp cheese
1/2 lb butter (2 sticks)
4 cups cooked black-eyed peas
3 jalapenos, chopped or sliced
1 Tbsp jalapeno juice
1/2 medium onion, chopped
1 (4-oz) can chopped green chiles

Instructions:

Melt together the cheese and butter. Combine remaining ingredients. Stir cheese mixture into black-eyed pea mixture. Heat in crock pot and serve with tortilla chips.
