Black Bean Dip
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
2 (15oz. ) cans black beans, drained
1/2 cup chicken broth
3 cloves garlic, minced
4 Tbsp. fresh lemon juice
2 tsp. ground cumin
1 jalapeno pepper, seeded and minced
1/2 tsp. salt
fresh cilantro sprigs, for garnish
Instructions:
In a food processor, blend together all the ingredients except the cilantro. Transfer the bean dip to a serving bowl and cover. Refrigerate until serving time, then garnish with the fresh cilantro.
Yields 4 cups.
