Berry Salsa
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 cup fresh blackberries, loganberries, boysenberries, red raspberries or black raspberries
1-1/2 Tbsp. finely minced fresh cilantro
1/2-1 red jalapeno pepper, finely minced, or to taste
1-1/2 Tbsp. finely minced fresh mint
1 Tbsp. freshly squeezed lime juice
salt, to taste
Instructions:
Mash 1/2 cup of the berries in a small mixing bowl. Stir in remaining 1/2 cup whole berries and remaining ingredients.
Serve at once. This goes well with roast pork, grilled chicken, duck and lamb chops.
