Beef Waterfall

These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.

Ingredients:

Marinade:
4 tsp palm sugar
3 cloves garlic, sliced thin
3 Thai chile peppers, cut into small pieces
Juice from 2 medium limes

Salad:
1 lb beef
1 Tbsp fish sauce
Juice from 2 medium limes
2 shallots, sliced very thin
1/3 cup cilantro, coarsely chopped
1/3 cup mint, coarsely chopped
2 green onions, thinly sliced
2 Tbsp toasted rice
1/2 tsp chili flakes

Instructions:

Mix marinade ingredients and marinate beef for several hours to overnight.

Grill beef over medium high heat until it’s done. Let rest for a few minutes and then slice against the grain of the meat into very thin slices. Combine the sliced beef with all of the other ingredients. Adjust the amount of herbs and spices to your tastes. The salad should be equally salty, sour, and hot. Serve with cabbage, cucumber, mint, and Thai basil.
