Baked Tex-Mex Pimiento Cheese Dip

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 1/2 cups mayonnaise
1/2 (12-oz) jar roasted red bell peppers, drained and chopped
1/4 cup chopped green onions
1 jalapeno pepper, seeded and minced
1 (8-oz) block extra-sharp Cheddar cheese, shredded
1 (8-oz) block pepper Jack cheese, shredded
Garnish: fresh cilantro leaves

Instructions:

Preheat oven to 350 degrees. Stir together first 4 ingredients in a large bowl. Stir in cheese. Spoon mixture into a lightly greases 2 quart baking dish.

Bake at 350 degrees for 20 to 25 minutes or until dip is golden and bubbly. Garnish, if desired. Serve with French bread cubes.

Makes about 4 cups.
