Baked Squash Ole
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
4-5 cups cooked squash, drained
1 tsp salt
1/2 tsp pepper
1 onion, chopped
1/4 cup diced jalapenos (that have been stemmed, seeded, and deveined)
1 cup grated Monterey Jack cheese
1 (10 3/4-oz) can cream of chicken soup
1 cup sour cream
1 stick butter, melted
1 package herb dressing mix
Instructions:
Place cooked squash in a mixing bowl and season with salt and pepper. Add onion, green chiles, cheese, soup, and sour cream. Blend well. Mix butter and herb dressing mix. Place 1/2 of the dressing mix in a 9×13-inch greased baking dish. Pour squash mixture on top. Sprinkle with remaining dressing mix. Bake at 375° for 30 minutes.
Serves 10.
