Baked Goat Cheese with Spicy Tomato Sauce
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
2 circles goat cheese
2 cups canned tomatoes
1 green hot pepper, deseeded
1 garlic clove
2 Tbsp butter
Instructions:
Heat butter in a pan and add garlic clove and hot pepper cut into half lengthwise. Saute for 2-3 minutes and add canned tomatoes. Simmer for 15 minutes and take hot pepper out of the sauce.
Preheat oven to 220 degrees C (425 degrees F ). Place each circle of goat cheese into a small baking dish and bake for about 10 minutes until soft. Add tomato sauce around the goat cheese circles and bake for 10 minutes until goat cheese gets golden. Serve hot with a piece of crusty French baguette for dipping.
