Bailey Farms Smokin’ Mexican Hollandaise Sauce

Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.

6 egg yolks
1 tsp. Bailey Farms Red Habanero Hot Sauce
1/4 tsp. lime juice
1/2 tsp cilantro leaves
2/3 stick butter


Add all of the ingredients, except the butter into a blender, and zap them quickly, until all the ingredients are well blended.

Put the butter in a bowl and pop it into the microwave for about 45 seconds to a minute. Check to make sure the butter is bubbling when you pull it out or put it back in for another 15-30 seconds (the butter must be very hot for the sauce to set up).

Remove the center piece from the blender top and while blending the egg yolk mixture, slowly pour in the hot melted butter, a little at a time, until it reaches a nice smooth consistency.

Serve this sauce like you would any other hollandaise sauce, on top of fresh grilled steaks, lobster tails, fresh asparagus, or Eggs Benedict.
