Bailey Farms Shrimp and Grits

Ingredients:

Shrimp:

1 good size slice of country ham
1 pound 36/40 Carolina Shrimp
3/4 cup scallions, cleaned and chopped thin
2 cloves garlic, minced
1 Tbsp. lime juice
1 Tbsp. Bailey Farms Jalapeno Hot Sauce

Grits:

2 cups quick grits
1/2 cup sharp cheddar cheese, shredded
2 Tbsp. butter
1 Tbsp. chopped fresh cilantro
2 Tbsp. Bailey farms Red Habanero Hot Sauce
salt and pepper, to taste

Instructions:

To prepare the shrimp:

Cut the slice of country ham into 3 strips lengthwise, and then cut each length into 1/8″ wide strips. Heat a cast iron skillet over medium heat for a couple of minutes and add the ham pieces. Stir well and allow the ham to brown nicely. Remove the ham pieces from the skillet.

Add the shrimp and scallions. Cook for a cou[ple of minutes or so and add the minced garlic, then stir in a tablespoon of hot sauce. Keep warm.

To prepare the grits:

Follow the package instructions for the quick grits, and when they are done, stir in the cheddar cheese, butter and 2 Tbsp. of hot sauce. Season to taste with salt and pepper.

To serve:

Place some of the cheese grits into individual serving bowls and cover with the shrimp-scallion mixture. Sprinkle the tops with some ham pieces and drizzle with a little lime juice and hot sauce. Garnish the bowls with the chopped cilantro and serve with hot biscuits.
