Bailey Farms Shrimp and Black Bean Ceviche

Ingredients:

1 pound medium (46/50) shrimp, peeled and deveined
1/2 cup diced red onion
1 cup diced Roma tomatoes
1/4 cup diced red or yellow bell pepper
2 Tbsp. of Bailey Farms Red Habanero Hot Sauce
juice of 6 limes
1 cup cooked black beans, rinsed and drained
1/4 cup chopped fresh cilantro
sea salt and freshly ground white pepper, to taste
1/4 cup olive oil

Instructions:

In a large pot of boiling, salted water, blanch the shrimp for about a minute, then transfer the shrimp to a glass bowl. Add the tomatoes, onions, bell peppers, hot sauce and lime juice, then stir the mixture thoroughly and refrigerate it for several hours or overnight. Stir the mixture a couple of times during the chilling process.

When ready to serve, stir in the olive oil, black beans and cilantro, then season to taste with some sea salt and pepper. Serve the ceviche with tortilla chips.
