Bailey Farms Pecan-Chile Cheese Log
Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.
Ingredients:
2 pounds shredded Cheddar cheese
1 serrano chile, stemmed, seeded and chopped
1 Tbsp. chopped garlic
16 oz. cream cheese, softened at room temperature
3 cups pecan pieces
1 Tbsp. peanut oil
2 Tbsp. Bailey Farms Red Habanero hot sauce
Instructions:
Combine the cheese, chile, garlic and cream cheese in a bowl and mix them together well.
In a small bowl add the pecan pieces and drizzle them with the peanut oil and hot sauce. Toss to cover the pieces well and place them on a foil lined baking sheet. Place the pan in a pre-heated 400F oven for about 10-12 minutes. Pull the sheet pan from the oven and allow the pecan pieces to cool.
Shape the cheese mixture into 4 logs about an inch in diameter and about 12″ long. Chop the roasted pecan pieces and roll the cheese logs in the chile-spiced pecans. Wrap each log in wax paper and cover with them in aluminum foil. Refrigerate the logs overnight to allow the flavors to meld.
Remove the logs and unwrap them from the waxed paper, then slice and serve with pita points or croustades.
