Bailey Farms Fried Chicken

Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.

Ingredients:

Marinade:

2 Tbsp. tomato paste
2 Tbsp. chopped fresh cilantro
1 Tbsp. dried thyme
1 Tbsp. dried Mexican oregano
1 small onion, minced
2 Tbsp. lime juice
1 Tbsp. comino seeds
1/4 cup pineapple juice
3 Tbsp. Bailey Farms hot sauce

Chicken:

3-1/2 pounds of chicken drumsticks and cleaned thighs

Oil for frying

Instructions:

To Make the Marinade:

Combine all the marinade ingredients and whisk together well in a glass mixing bowl and set aside.

To prepare the chicken:

Place the chicken pieces in a gallon size Ziplock bag and pour the marinade over the meat. Combine well and let marinate in the refrigerator for an hour.

To fry the chicken:

Pour 32 oz. of safflower oil into a cast iron skillet over medium heat for about 10 minutes. Take the chicken pieces and dredge them well in a seasoned breader (I likeĀ House of Autry’s) and carefully place the chicken pieces in the hot oil. Be careful not to overload the skillet or the individual pieces will not receive equal heat.

Cook for 5 or 6 minutes on each side and turn to finish frying. Transfer the cooked chicken to paper towels on a serving platter and continue cooking until all the chicken is done. This chicken is excellent both hot and cold. Serve with potato salad or your favorite summer side dish.
