Bailey Farms Caribbean Barbecue Sauce

Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.

Ingredients:

2 cups pineapple juice
1/4 cup orange juice
1/2 cup rice wine vinegar
1/2 cup cider vinegar
1/3 cup soy sauce
3 Tbsp. finely minced fresh ginger
2 garlic cloves, minced
1 cup ketchup
1/2 cup firmly packed dark brown sugar
1 Tbsp. Bailey Farms Red Habanero Hot Sauce
1/4 cup fresh lime juice
1/4 cup finely chopped fresh cilantro

Instructions:

Combine the juices, vinegars, soy sauce, ginger and garlic together in a medium saucepan, and bring the mixture to a boil, stirring occasionally, over medium-high heat. Boil the mixture for about 15 minutes, stirring occasionally, or until it hass reduced by about half.

Stir in the ketchup, brown sugar, and hot sauce, then reduce the heat and simmer for about 10 minutes. Remove the mixture from the heat and stir in the lime juice and cilantro.

This barbecue sauce is excellent on firm fish and skewered chicken and shrimp kebabs.
