Bacon Wrapped Stuffed Jalapenos

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Makes 12.

 

Ingredients:

 

6 jalapenos, sliced and seeds removed

6 slices bacon, sliced in half

1 pound sausage, spicy, maple, turkey… your preference

2 cups sharp cheddar cheese, shredded

 

Heat oven to 400 degrees.  Cut each jalapeno lengthwise and remove seeds.  In a bowl, combine cheese and sausage.  Fill each jalapeno with cheese/sausage mixture and wrap with a slice of bacon.  Secure bacon with toothpicks.  Place stuffed jalapenos on a baking sheet and cook for around 20 minutes, or until bacon is crispy.
