Bacon-Wrapped Pork with Spicy Mango Relish

Ingredients:

Bacon Wrapped Pork:

4 boneless pork chops,1 1/2-inch thick
8 strips bacon
1/2 cup soy sauce
1/2 cup fresh lime juice
1 tsp. Bailey Farms Chocolate Habanero Hot Sauce
2 to 3 cloves fresh garlic, minced

Mango Relish:

1 mango, peeled, pitted and chopped
2 Tbsp. fresh lime juice
1 tsp. chopped jalapeno chile
2 Tbsp. chopped fresh cilantro
1 clove garlic, minced
salt to taste

Instructions:

To Prepare the Pork:

Wrap 2 strips of the bacon around the outside edge of each pork chop and secure with toothpicks. Mix together the soy sauce, lime juice, hot sauce and garlic. Reserve half of the mixture for basting and place the other half in a shallow baking dish. Add the pork chops to the dish and turn to coat both sides. Cover them and refrigerate for at least 1 hour, turning occasionally. Remove the chops from the marinade and place them on a grill over medium coals. Cook for 12-16 minutes, basting with the reserved marinade, until the pork reads 160°F with an instant-read meat thermometer. Serve with a large dollop of the Spicy Mango Relish.

To Prepare the Mango Relish:

In a small bowl stir together the chopped mango, fresh lime juice, cilantro and chopped jalapenos. Blend well and refrigerate for 1 hour before serving.
