Babette’s Carnitas

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 (3-4 lb) beef chuck roast
1/2 cup chopped jalapeno peppers that have been stemmed, seeded, and deveined
2 Tbsp chili powder
1/2 tsp oregano
1/3 tsp cumin
1 clove garlic, minced
Salt to taste
Tortillas
Guacamole
Salsa

Instructions:

On a large piece of heavy-duty foil, place roast. In a small bowl, combine jalapenos, chili powder, oregano, cumin, garlic, and salt. Spread mixture on top surface of the beef roast. Wrap in foil and seal securely. Place in ovenproof dish and bake for 3 1/2-4 hours at 300°. Cook longer if necessary. (The meat should be so tender that it will fall apart.) For each serving, spoon meat into hot tortilla. Serve with guacamole and salsa.
