Avocado Salsa II
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1/2 cup finely chopped peeled avocado
1/3 cup tomato, seeded and chopped
2 Tbsp. finely chopped onion
1-2 Tbsp. jalapeno chiles, seeded and finely chopped
1 Tbsp. chopped fresh cilantro
1 Tbsp. fresh lime juice
1/8 tsp. salt
Instructions:
Combine all the ingredients and toss together in a small bowl. Serve immediately.
This is particularly good served with tortilla chips or as an addition to tacos, fajitas, etc.
