Asian Chicken with Serrano Peanut Butter Sauce

This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.

Ingredients:

2 chicken breasts, thawed
1 serrano pepper, diced
2 Tbsp peanut butter
1 cup chicken broth
4 oz. fettucini noodles
Black pepper to taste
Oil spray

Instructions:

Slice the chicken into thin slices and season to taste with pepper. Sear chicken in a lightly oiled pan about 3-4 minutes per side. Add serrano pepper and stir. Add chicken broth and peanut butter. Mix well.

Reduce heat and simmer on low about 10 minutes to allow sauce to reduce and chicken to absorb the flavor. Serve over fettucini (cooked as directed).
