Armadillo Eggs

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1/2 lb Monterey Jack cheese
1/2 lb sharp cheddar cheese
1/2 lb pork sausage, spicy
1 1/2 cups Bisquick baking mix
1 egg
1 package of Pork flavored Shake ‘n Bake or other seasoned breadcrumbs
20 jalapeno peppers, whole

Instructions:

Slice the peppers in half lengthwise and scrape out all the seeds (wear gloves). Try to keep both halves of the pepper near each other as you have to put them back together later.

Mix Bisquick, raw sausage and cheddar cheese.

Stuff each pepper with Monterey Jack cheese and put the halves back together. Grab a handful of the Bisquick mixture and mold around each pepper in the shape of an elongated egg. Use enough to cover the pepper well. Dip armadillo egg in beaten egg and roll in Shake ‘n Bake. Bake on a broiler pan at 350° for 25 minutes or until crisp.
