Arizona Biltmore Kumquat Salsa

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

2 jalapeno chiles, seeded and diced into 1/2″ pieces
3 cloves fresh garlic, chopped
1/2 to 3/4 cup cilantro, finely chopped
4 kumquats, quartered
2 cups orange juice
2 cups lemon juice
2 Tbsp. brown sugar
4 red tomatoes, diced into 1/2″ pieces
1 red onion, diced into 1/2″ pieces
salt and pepper to taste

Instructions:
Mix the jalapenos with the garlic and cilantro. Remove the insides from the kumquats and put them in a small pot. Add the orange juice, lemon juice and brown sugar. Simmer over medium heat and reduce.

While the mixture reduces, cut the kumquat shells into 1/2″ sized pieces and add to the reduction. When the reduction is done and tender, mix with the other ingredients, and add salt and pepper to taste.
