Angel Hair with Cherry Tomatoes, Green Chiles, and Ham
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno
(about 10,000 to 15,000 Scoville units).It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews.Try these as a hotter substitute for Jalapeno.
Ingredients:
8 oz. Angel hair pasta
6 oz. cherry tomatoes, halved
2 green chiles, sliced (with seeds)
2 cloves garlic, chopped
2 sausages, cubed (I used Johnsonville’s Beddar sausage)
6 slices ham/bacon, cut into bit-size pieces
1/8 cup cooking cream/double cream
1/4 cup Parmesan cheese
2 tbsp extra virgin olive oil
black pepper
Instructions:
Boil the pasta until al dente. Angel hair takes less time to cook than other pastas, so make sure you keep an eye on it. Mine was done in less than 5 minutes. Reserve 1/2 cup of the cooking water.
Saute the garlic and green chilies in a medium high heat pan with the olive oil.
When the green chiles start to lose its firmness, put the cherry tomatoes in and leave for about 2 minutes.
Put the ham and sausages in and stir to combine.
Add the cooking cream, parmesan cheese and freshly grounded black pepper. If it’s too thick, add a bit of the pasta water.
Put the pasta in and mix well. Add more pasta water if needed.
I didn’t put any salt in because the sausages, ham and cheese provided enough saltiness to the dish. But please do taste it and if needed, just add a bit of sea salt.
Immediately serve and enjoy!
