Afterburners
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
12 unpeeled medium-size fresh shrimp
12 jalapeno peppers
6 bacon slices, halved lengthwise
Instructions:
Peel the shrimp and devein. Cut a slit in each jalapeno pepper and remove the seeds and membranes. Carefully place one of the shrimp in each cavity of the peppers.
Wrap each pepper with 1 bacon piece, and secure with a wooden pick. Place on a broiler pan and cook 5-1/2 inches from the heat for 6-7 minutes on each side, or until the bacon is cooked. Serve warm and drizzle with green chile sour cream sauce**.
Yields 6 appetizer servings.
