Yellow Tomato Salsa

JalapeƱos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. JalapeƱos have a balanced combination of flavor and heat.

2 pints of yellow cherry tomatoes or 1 pound of yellow tomatoes
1/2 small onion, minced
2 cloves garlic, minced
1 jalapeno chile, finely minced
1 Tbsp. fresh cilantro, minced
fresh lime juice to taste
salt to taste
1 Tbsp. maple syrup (if the tomatoes are not sweet enough)

Combine the onion, garlic, chiles, vinegar, cilantro, lime juice and salt , mixing well. Stir in the tomatoes and add maple syrup if you feel it is needed. Do not make ahead – the mixture should be fresh.

Makes 2 cups.
