White Bean and Black Olive Salsa
This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.
It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.
Ingredients:
2 (15oz.) cans white beans (cannellini), drained and rinsed
1 medim tomato, cored, seeded and chopped
1/2 cup kalamata olives, pitted and chopped
2 Tbsp. fresh rosemary, chopped
1 habanero, seeded and minced
2 Tbsp. extra virgin olive oil
1 Tbsp. balsamic vinegar
salt and pepper to taste
Instructions:
Mix the beans, tomato, olives, rosemary and habanero. Sprinkle the mixture with olive oil, vinegar and salt and pepper. Stir gently. Make this salsa several hours ahead of time to allow the flavors to blend. Bring to room temperature before serving.
