West Indian Pepper Sauce

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

1 mango or papaya
1 medium yellow onion, coarsely chopped
1 medium garlic clove
5 habanero chiles, stemmed, but not seeded
1″ piece of ginger root
1/2 tsp. turmeric
1 Tbsp. dry mustard
1 pinch cumin
1 pinch coriander
1/2 Tbsp. honey
1/2 cup cider vinegar
1/2 cup water
1 tsp. salt

Instructions:
Puree the first 10 ingredients in a blender. Transfer the mixture to a bowl. In a non-reactive saucepan, bring the vinegar, water and salt to boil. Pour over the mango mixture and stir well. Allow to cool before bottling.

Refrigerated, the sauce will keep approximately 6 weeks.
