Vietnamese Vermicelli Noodle Salad with Pork Skewers
At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.
When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.
Kitchen stuff: 12 bamboo skewers
Quantities: Serves 4
Timing: 2 hours+ marinating, 20 minutes hands on time
Ingredients:
1 tbsp sugar
3 lemongrass stalks, hard outer shell removed and finely chopped
4 tbsp fish sauce
1 tbsp honey
A few turns of freshly ground black pepper
6 spring onions, white part pounded to a paste using a pestle and mortar – slice the green part and keep as a topping
2 garlic cloves, finely chopped
500g/1 lb pork shoulder steaks, sliced into 3mm slices
2 tbsp vegetable oil
250g/8 oz rice vermicelli noodles
Handful of mint leaves
Handful of basil leaves
Half a cucumber, halved lengthways and sliced
2 handfuls of beansprouts
2 tbsp crispy shallots (you can buy these at any Asian supermarket or make your own)
4 tbsp peanuts, toasted and crushed
2 handfuls of pickled carrot matchsticks, recipe here
Nuoc mam cham dipping sauce
1 1/2 tbsp fish sauce
1 1/2 tbsp rice wine vinegar
1 tbsp sugar
1 garlic clove,chopped
1 red chile, thinly sliced
1 tbsp lime juice
Method:
Nuoc Mam Cham dipping sauce
1. Put the fish sauce, sugar and vinegar in a small saucepan with 60ml water. Place over a medium heat, stir well and cook until just before it boils. Remove the pan from the heat and allow to cool. Just before the salad is ready, stir in the garlic, sliced chilli and lime juice. Store in a tightly sealed jar in the fridge for up to 5 days.
Noodle Salad
1. MARINATE: In a large bowl, mix the sugar, fish sauce, honey and pepper together until the sugar has dissolved. Then add the bashed spring onion, garlic and pork slices. Mix it all together to coat the pork, then pour the vegetable oil on top. cover with cling film and marinate in the fridge for 2 hours, or overnight if possible – the longer the better!
2. SKEWERS: When you’re ready to start preparing your salad, soak your wooden skewers in water for 15 minutes to prevent scorching, then thread the pork onto the skewers and get rid of the remaining marinade.
3. NOODLES: Cook your noodles – pour boiling water over the noodles in a large saucepan (off the heat) and leave to soak for 4-5 minutes until soft.
4. PORK: Chargrill (if you can) or fry the skewers over medium – high heat for 1-2 minutes on each side, rotating until just cooked through and nicely browned/charred on each side.
5. NOODLE BOWLS: To serve, divide the noodles between 4 bowls. Top with the herbs (whole leaves, or shredded if you prefer), cucumber slices, pickled carrot and bean sprouts, then sit the pork skewers on top. Drizzle each bowl with the nuoc mam cham dipping sauce and sprinkle with the crispy shallots, crushed peanuts and spring onion slices.
