Vegan Tacos with Mango Salsa

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Serves 4

Ingredients for mango salsa:

One mango
Two jalapenos
One chile
One lime
One spring onion or shallot onion
One bunch of fresh coriander
Salt to taste

To make the mango salsa: peel and dice the mango. Chop the jalapenos, chile, onion and coriander finely. Mix all the ingredients together.
Squeeze the juice of the lime into the mix. Add salt if needed.

Ingredients for guacamole:

Two avocados
One spring onion or shallot onion
One lime
Salt and pepper to taste

To make the mango salsa, peel and dice the mango. Chop the jalapenos, chile, onion and coriander finely. Mix all the ingredients together.

Squeeze the juice of the lime into the mix. Add salt if needed.

Ingredients for the soy strips:

2 C / 4 ½ dl dried soy strips
2 C / 4 ½ dl vegetable stock
1 tbsp dried sage
2 tbsp tomato paste
1 tbsp smoked paprika
2 tsp soy sauce
2 tsp ground cumin

Boil the vegetable stock and add it with the other ingredients to a container. Let the soy strips soak for at least 30 min, preferably overnight.

Add oil to a pan. Heat it to a medium heat. Fry the strips in small batches until they get some color. You can add some more salt and spices at this stage to make the strips even more flavorful!
