Tuna Tartare
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.
Ingredients:
1/2 lb Yellowfin tuna, raw, the best quality possible
1 Tbsp mayonnaise
1 1/4 tsp soy sauce
1/2 tsp sriracha (Thai hot sauce)
1/2 tsp sesame seeds
One bunch green onions, thinly sliced, white and light green parts
1 heaping tsp finely chopped jalapenos, without seeds
Instructions:
Slice the tuna with a very sharp knife into tiny cubes. Mix the mayonnaise, soy sauce, sriracha and a little salt and pepper. Pour most of the sauce over the fish and mix it to combine.
Right before you serve the tuna, taste it for flavor and add the remaining sauce, if necessary.
Serve with potato chips or other suitable crackers. This would also be delicious with a little bit of sliced avocado, I think.
