Tomatillo Sauce (Chicken Broth Base)
The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. Ingredients:
1-1 /4 pounds tomatillos, husked
1-2 jalapeno chiles
1 onion chopped fine
2 cloves garlic minced
1 Tbsp. oil
2 cups chicken broth
1/4 tsp. salt
Instructions:
Wash the tomatillos well. In a medium-large pot place the tomatillos and jalapenos. Add some water and boil them for 10 minutes. Next, remove the tomatillos and chiles from the pot. Remove the stems from the chiles and place the tomatillos, jalapenos, onion and garlic in a food processor and coursely puree.
In a medium pot heat the oil over medium heat, add the puree and simmer for 2-3 minutes. Then add the broth and salt. Simmer for 15 minutes, stirring occasionally.
Serve with your favorite mexican dish.
