Three Bean Salad
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina™ peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Ingredients:
1 cup green beans, blanched for 2-3 minutes until slightly tender, diced
1 cup wax beans, blanched for 2-3 minutes until slightly tender,diced
1 can garbanzo beans, drained and rinsed
½ head radicchio
3 mini bell peppers, seeded-cored and finely chopped
1 cup cherry tomatoes or baby heirloom tomatoes, cut in half
Blackberry vinaigrette
2 T red wine vinegar
10 whole blackberries
1 T lime juice
1 T maple syrup
1 shallot
1 tsp whole grain mustard
1/3 cup olive oil
Instructions:
Combine salad ingredients together. Toss with vinaigrette to lightly coat.
