The Poop Deck at Sandy Ford’s Mango Salsa
Finger Hot is the commercial name for this asian-type pepper that is actually very similar to fresh cayenne and can be used in any recipe to add heat without changing the flavor. It is a good chile to chop and use in stir fry.
They are thin-walled and measure about 1/2″ wide and 5″ to 8″ long. These chiles also dry very nicely.
Ingredients:
1 firm mango, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/2 medium white or purple onion, diced
1/4 cup honeydew melon, diced
1/8 cup pineapple juice
1/2 tsp. sugar
1 finger hot pepper, diced
Instructions:
Mix all the ingredients together and let sit for at least one hour or overnight.
