Thai Green Curry Paste
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
INGREDIENTS
Coriander seeds – 2 tsp
Cumin seeds – ½ tsp
Black peppercorns – ½ tsp
Shallots – 6-8 ( use ½ chopped onion if shallots are not available )
Garlic – 3-4 cloves
Coriander roots – 1 tbsp ( Chopped ). You can use coriander stem if roots are not available.
Coriander leaves – 1 tbsp
Green chiles – 3-4
Galangal or Ginger – 1 inch piece
Lemon grass stalk – 1 ( remove the leaves from outside the stalk and cut into slices )
Kaffir lime leaves – 1 ( Chopped )
Shrimp paste – 1 tsp
Thai basil leaves – 8-10
Fish sauce – 1 tsp
Salt – 1 tsp
Oil – 1 tbsp
INSTRUCTIONS
Dry roast coriander seeds, cumin seeds and black peppercorns until slightly fragrant and browned.
Add all the ingredients in a mortar and pestle and pound to make a smooth paste.
You can also add all the ingredients in a grinder and grind to make a fine paste.
